Spacer Wine caves are thought to have been around for hundreds of years, since Roman times or possibly even before. Since the 1970s restoration of the old Beringer wine caves, a renaissance has been sweeping across Napa Valley. Perhaps the reason they have become so popular is that they not only add aesthetic appeal, they are the most cost effective and energy efficient way of storing and aging wine. Temperatures under Napa Valley are a constant 58 degrees and the humidity is high which reduces evaporation.

Jacob Beringer hired 100 Chinese workers in 1877 to build some of the very first wine caves in Napa Valley. The workers had come out of a group that had just finished working on the Transcontinental Railroad. Caves were dug with picks and shovels; dirt and rock carried back out by hand in woven baskets. It was grueling work. Over the course of many years, they dug around 1000 feet of tunnels. The restoration of these caves in 1972 began a new era of wine caves in Napa Valley.

Jacob Schram was a pioneer in more than one way. He traveled from Germany to the US at a young age, made the move to California, was the first to plant a vineyard on mountain slopes, and also dug the very first wine cave in Napa Valley. Built in 1867, it was admittedly only a wine cellar with barely enough room for three people to stand, but he was able to store a wine barrel as well as several kegs. It was expanded in 1881, and a few years later he began digging caves in earnest.

Caves in Napa Valley range from the practical to the elegant and are getting better and better every day. They have moved beyond merely a place to store and age your wine. Wine libraries as well as tasting rooms have been added. Jarvis Winery was the first to have the entire winemaking facilities contained underground and it is incredible. Its 45,000 square feet include all the trimmings of a winemaking facility with aesthetic bonuses such as an actual creek and waterfall as well as room with walls of amethyst and quartz.
