Kitchen - Julia’s Kitchen is named for
Julia Child, the patron saint of the kitchen, and is an integral
part of COPIA, both aesthetically and programmatically. The
dining room's dramatic open kitchen with views and access
to the gardens, provide visitors with an exceptional wine
country experience. Guests can watch culinary masters in action
as they savor the impressions and dishes infused with the
fresh tastes of the seasons. Julia’s Kitchen is the
perfect blend of impeccable service and extraordinary food
in a gracious and relaxed environment. Renowned Executive
Chef Victor Scargle works his magic utilizing locally grown
organic and seasonal products – like Napa raised lamb,
duck from Sonoma, sustainable seafood and produce from COPIA’s
own Edible Gardens - to create a California-French inspired
menu that accentuates the naturally delicious and complex
flavors of his cuisine.

- All meals are freshly prepared onboard as they are ordered
in each of the three Railcar dining environments. Award~winning
Executive Chef Kelly Macdonald & his staff showcase their
talent daily in all three restaurants using the freshest of
